The main composition is the sodium salt of alginate, a mixture of polyglucuronic acid. It is a kind of gum extracted from brown seaweeds such as kelp. Soluble in hot water and cold water, 1% aqueous solution pH value of 6 ~ 8, can form a viscous colloidal solution, and easy to mix with proteins, starch, pectin, gum arabic, carboxymethyl cellulose, sucrose, propanetriol and sorbitol. Insoluble in dilute acid with pH less than 3. When the pH is 6-9, its viscosity is stable, and its viscosity decreases when heated above 80℃.

Sodium alginate can help suspension, thickening, emulsification, adhesion, etc. It is mainly used as suspending agent, emulsifier, viscous agent, capsule material of microcapsules, etc. in pharmaceuticals.
