Propyl gallate (PG), also known as propyl gallate, is a synthetic oil soluble antioxidant. Oil soluble antioxidants are all phenolic compounds, including butyl hydroxyanisole (BHA), dibutyl hydroxytoluene (BHT), tert butylhydroquinone (TBHQ), etc. In addition to PG, they can provide hydrogen atoms to combine with the free radicals generated by the auto oxidation of oils and fats, forming relatively stable structures and blocking the chain auto oxidation process of oils and fats, thus achieving the purpose of antioxidant.
