Lactulose 4618-18-2

Lactulose is produced by the isomerization of lactose under alkaline conditions. Its main component is isomerized lactose, which accounts for more than 50% of the total content; moisture makes up 30%, and the remainder consists of unreacted lactose and its decomposition products—fructose, galactose, and glucose. It is a pale yellow, transparent, viscous liquid (with a concentration of over 50%) that has a refreshing sweet taste, with a sweetness level of 48% to 62% that of sucrose. When used in combination with sucrose, its sweetness can be enhanced. It has a relative density of 1.35 and a refractive index of 1.47. It is soluble in water, with a solubility of 70% in water at 25°C.
