Gepeng ester is an aromatic ester compound containing an epoxy structure and an ester group. It is mainly prepared by Darzens condensation reaction of acetophenone and ethyl chloroacetate under alkaline conditions. The core molecular structure contains an epoxy ring (- C-O-C -), an ester group (- COO -), and a benzene ring. The epoxy ring and ester group together give it unique aroma release characteristics, while the benzene ring enhances the richness and persistence of the aroma. Its aroma threshold is extremely low (about 0.01 μ g/kg). It is the core essence component simulating strawberry, raspberry and other berry aroma, and has excellent aroma stability. It is not easy to volatilize or decompose in various substrates.

It should be stored in a cool, dark, and well ventilated warehouse with a temperature controlled between 5-25 ℃. It should be kept away from direct sunlight (brown packaging must be used or a shading board must be installed in the warehouse to prevent oxidation and deterioration caused by light exposure), and kept away from heat sources (such as heating pipes, boilers, heating equipment) and fire sources. The warehouse should be equipped with ordinary lighting and ventilation equipment (no explosion-proof type, high flash point), and open flame operations are strictly prohibited.
The relative humidity in the warehouse should be controlled at<60% to prevent the product from absorbing moisture (although the water absorption is weak, a humid environment may accelerate ester hydrolysis). It is recommended to place silicone desiccants in the warehouse (5-8kg per 100 square meters) and regularly check the hygrometer to ensure that the moisture level meets the standard.
