1. Flavour Enhancer For Foods And Beverages: It enhances and modifies flavour and aroma so sweetness is perceived more fully, and it is recorded as a flavouring agent, nutritive sweetener and processing aid.

2. Gourmand Fragrance Ingredient: Perfumers use its sweet caramelised note to build gourmand and edible accords, running from candy floss and burnt sugar to overripe fruit, and it also appears in cosmetics and personal care fragrances.

3. Metal Ion Chelation And Complex Formation: Its pyrone ring binds metal ions, so it works as a chelating agent that sequesters metals in formulations and as the ligand used to build metal maltolate complexes such as ferric maltol.
