Vital Wheat Gluten is a natural protein complex derived from wheat flour (primarily glutenin and gliadin) by hydrating the flour to separate the starch from the gluten. It appears as a cream to light tan colored, free-flowing powder with a characteristic cereal-like odor. Insoluble in water, but absorbs up to twice its weight in water to form a cohesive, elastic mass. Commonly used as a dough conditioner and texturizer in baking and food processing to improve dough elasticity, water absorption, mixing tolerance, and loaf volume. Also functions as a binding agent, protein supplement, and texture enhancer in meat analogs, pet foods, pasta, breakfast cereals, and nutritional products. Stable under normal storage conditions and should be kept in airtight containers away from moisture, heat, and pests.
