Potassium bitartrate (CAS 868-14-4, molecular formula C ₄ H ₅ KO ₆), commonly known as tartar powder, is a natural byproduct of the wine making process. It is mainly used as a leavening agent (acidic component of baking powder) in the food industry and a stabilizer for chiffon cakes. It is also a commonly used buffering agent in analytical experiments. This substance is a white crystalline powder, slightly soluble in cold water, easily soluble in hot water and dilute acid.
