Naringinase (CAS 9068-31-9) is a natural hydrolytic enzyme complex composed of α - L-rhamnosidase and β - D-glucosidase. It appears as a white to off white powder at room temperature and is easily soluble in water. Its main use is as a de bittering agent in the juice industry, which can decompose the bitter component naringin in citrus fruits (especially pomelos) into odorless substances, thereby removing bitterness.
