Cellulase is a collective term for a group of enzymes that catalyze the hydrolysis of cellulose to produce glucose and low molecular weight fibers, including three main components: endoglucanase, exoglucanase, and cellulase. It is not a single enzyme, but a multi-component enzyme system that works synergistically. Cellulose enzyme is a gray white powder or liquid. In 1906, Seilliere discovered cellulase in the digestive juices of snails. Cellulose enzymes can hydrolyze β -1,4-glucoside bonds in fibers, producing soluble polymers and D-glucose. According to the source of the enzyme, its relative molecular weight ranges from a minimum of 5000 to a maximum of 400000. The optimal pH value is 4.0-5.0. The optimal temperature is between 40-60 ℃. Certain metal ions such as Mg2+, Cl2+, and neutral salts can activate this enzyme, while other metal ions such as Ag2+, Cu2+, Mn2+, Hg2+, and dyes can inactivate this enzyme. Adding cellulase during brewing can improve saccharification efficiency and alcohol yield, and reduce the viscosity of the mash. The cellulase mainly comes from Aspergillus niger and Trichoderma.
