Ammonium acetate (formula: NH₄CH₃CO₂) is a highly water-soluble, hygroscopic white crystalline solid. It is primarily used as a pH buffer in biochemistry and analytical chemistry, as a protein precipitant, and as a catalyst in organic synthesis.

Analytical Grade: Ammonium acetate is the most commonly used eluent buffer additive.
1. Volatile Buffer for Mass Spectrometry (MS): In liquid chromatography-mass spectrometry (LC-MS) analysis, the eluent needs to be vaporized and ionized before entering the mass spectrometer for detection. Ammonium acetate decomposes into ammonia and acetic acid (both gases) at high temperatures, completely evaporating without leaving any solid residue on the mass spectrometer nozzle and ion source, making it the "golden buffer" for mass spectrometry analysis.
2. Protein Precipitation and Nucleic Acid Purification: In biochemistry, high concentrations of ammonium acetate are often used to precipitate and recover DNA or RNA. Compared to sodium acetate, using ammonium acetate to precipitate nucleic acids reduces the co-precipitation of coenzymes or free nucleotides, resulting in purer subsequent enzymatic reactions.
Industrial Grade - Dyeing Leveling Agent in the Printing and Dyeing Industry:
In textile dyeing processes (especially acid dyeing of wool or silk), as the temperature rises during dyeing, ammonium acetate slowly volatilizes ammonia, causing the pH of the dye bath to decrease slowly and evenly. This gradual pH change allows the dye to adhere very evenly to the fabric, preventing color spots and color variations.
Food Grade - Meat Preservation and Preservation
In specific processing stages in the food industry, it is used as an acidity regulator. Due to its antibacterial properties, it has also been used as a relatively mild preservative.
