Calcium sulfate (chemical formula CaSO₄) is an inorganic compound composed of calcium, sulfur, and oxygen. In its naturally occurring dihydrate form, it is widely known as gypsum — one of the most abundant minerals on Earth.

Calcium sulfate is a white, odorless powder or crystalline solid that appears across multiple industries because of its unique combination of properties: low toxicity, thermal stability, controlled solubility in water, and the ability to reversibly bind and release water molecules. These characteristics make it indispensable in construction, food processing, agriculture, paper manufacturing, and a broad range of industrial applications.

Calcium sulfate's utility spans more industries than most buyers initially realize. Here's a detailed breakdown of each major application area.

Construction & Building Materials

This is by far the largest market segment, accounting for more than 60% of global calcium sulfate consumption.

Gypsum Wallboard (Drywall)

Gypsum wallboard is the dominant interior wall and ceiling material in modern construction. The gypsum core — composed of calcium sulfate dihydrate — provides fire resistance (chemically bound water is released as steam during a fire, slowing heat transfer), sound insulation, and dimensional stability. Global wallboard production exceeds 12 billion square meters annually.

Portland Cement

Anhydrous calcium sulfate or gypsum is added to cement clinker at 3–5% by weight as a set retarder. Without this addition, Portland cement would set almost immediately upon mixing with water — making transport and placement impossible on construction sites.

Plaster & Self-Leveling Underlayments

Calcium sulfate hemihydrate (Plaster of Paris) is the base material for:

● Interior wall and ceiling plasters

● Decorative moldings and cornices

● Self-leveling floor underlayment compounds (used beneath vinyl, tile, and wood flooring)

● Casting molds for ceramics and metalworking

 

Food Industry

Calcium sulfate has been used in food processing for centuries. When labeled as a food additive, it carries the E-number E516.

Tofu Coagulant

The most well-known food application of calcium sulfate is as a coagulant in tofu (soybean curd) production. When added to heated soy milk, calcium ions cause the soy proteins to aggregate, forming the characteristic soft curds. Calcium sulfate produces tofu with a smooth, tender texture — the style most commonly found in Chinese and Japanese cuisine. Approximately 2–3 grams of food-grade calcium sulfate are used per liter of soy milk.

Baking & Dough Conditioning

In commercial baking, calcium sulfate serves as:

● A dough conditioner that strengthens gluten networks and improves bread volume and texture

● A calcium enrichment source in fortified flours and cereal products

● A firming agent in canned vegetables and fruit processing

Brewing & Winemaking

Calcium sulfate (often called Burton salts in brewing) is added to brewing water to:

● Adjust water hardness and mineral profile — especially for hop-forward beer styles like IPAs

● Lower mash pH to the optimal range for enzymatic activity (5.2–5.6)

● Enhance yeast flocculation and improve beer clarity

● In winemaking, it serves as a calcium source that aids tartrate stabilization

 

Agriculture & Soil Conditioning

Agricultural applications are the fastest-growing segment for calcium sulfate, driven by increasing awareness of soil health issues.

Soil Amendment

Calcium sulfate addresses several critical soil problems:

Sodic soil reclamation

● — Calcium ions displace excess sodium from clay particles, improving soil structure without raising pH (unlike agricultural lime)

Improved water infiltration

● — Better soil aggregation means less crusting and surface runoff

Reduced soil compaction

● — Particularly beneficial in heavy clay soils

Aluminum toxicity mitigation

● — Sulfate precipitates soluble aluminum in acid subsoils

Unlike agricultural lime (CaCO₃), calcium sulfate does not raise soil pH. This is critical for crops and regions where the soil pH is already optimal but structure needs improvement.

Plant Nutrient Source

Calcium sulfate supplies two essential plant nutrients:

Calcium

● — Required for cell wall formation, root development, and fruit quality (prevents blossom-end rot in tomatoes, bitter pit in apples)

Sulfur

● — Essential for protein synthesis and chlorophyll formation; deficiencies are increasingly common as atmospheric sulfur deposition has declined

Typical application rates range from 500 to 2,000 kg per hectare, depending on soil conditions and crop requirements.

 

Paper & Coatings

Calcium sulfate serves as:

● A coating pigment and filler in paper manufacturing, improving brightness, opacity, and printability

● A flatting agent and extender pigment in paints and architectural coatings, replacing a portion of more expensive titanium dioxide without significant loss of hiding power

● A filler in printing inks and sealants

 

Industrial Desiccant

Anhydrous calcium sulfate is a highly effective desiccant (drying agent). Its key advantages over silica gel include:

Higher moisture capacity

● — Absorbs up to ~6.5% of its weight in water

Controlled absorption rate

● — Gradual moisture uptake prevents condensation shock in packaging

Non-toxic and chemically inert

● — Safe for use with food, pharmaceuticals, electronics, and sensitive materials

No leaching or swelling

● — Remains physically stable even at full saturation

Common desiccant applications include moisture-proof packaging for electronics, precision instruments, laboratory reagents, and industrial equipment during shipping and storage.

 

Water Treatment

In water and wastewater treatment, calcium sulfate:

● Assists in the removal of fluoride from drinking water in certain treatment configurations

● Serves as a coagulant aid in sedimentation processes

● Helps precipitate heavy metals from industrial wastewater streams

 

Plastics & Rubber

As a functional filler in plastic and rubber compounding, calcium sulfate:

● Improves dimensional stability and heat resistance

● Enhances surface smoothness of extruded and molded parts

● Reduces formulation cost by partially replacing more expensive resins
