Food Grade: Primarily used as a quality improver, moisture retainer, acidity regulator, and emulsifying anticoagulant.
1. Condensed Milk and Evaporated Milk: During the high-temperature evaporation and concentration of milk, proteins are highly susceptible to coagulation and separation due to heat. Adding disodium dodecahydrate effectively adjusts the pH value, stabilizes casein, and prevents coagulation and fat separation in dairy products during heat sterilization or storage.
2. Processed Cheese: As an emulsifying salt, it helps the proteins and fats in cheese to bind evenly when heated, resulting in a smooth texture.
3. Compound Water Retention for Meat and Seafood: Blended in compound water-retaining agents for the processing of ham, sausages, meatballs, and frozen shrimp and fish paste. It raises the pH value of the meat, enhances the water-holding capacity of muscle fibers, making the meat tender and juicy, and reducing moisture loss during cooking and thawing.
4. Solid Beverages and Instant Powders (Solubilizer and Buffer): Used in coffee creamer (non-dairy creamer) and powdered beverages. It not only prevents powder from clumping but also acts as a buffer during preparation, preventing the creamer from forming a "feathered" precipitate in hot coffee due to acidity.
Industrial Grade:
1. Industrial Water Treatment and Boiler Corrosion and Scale Inhibition: When injected into boiler water, it reacts with calcium and magnesium hardness ions to form loose, non-sticky phosphate sludge, which is regularly discharged through blowdowns, preventing the formation of hard silicate or sulfate scale.
2. Pipeline Metal Passivation: Phosphate ions induce the formation of a dense iron-phosphate passivation film on the surface of steel inside high-pressure or medium-pressure boiler systems, thus isolating dissolved oxygen in the water and preventing pitting and perforation of boiler tube walls.
3. Dyeing and Fabric Weighting Auxiliary: In the textile industry, it is an alkaline buffer for cotton scouring and dyeing. In silk refining and silk fabric processing, it is often used as a silk weighting agent and dyeing auxiliary, making the silk feel fuller and the color more even.
4. Flame Retardant for Paper and Wood: Used as a color stabilizer in the paper industry during pulp bleaching to prevent iron ion contamination that causes paper yellowing. It can also be used as a component of fire-retardant impregnating agents for wood, fabrics, and paper.
5. Pre-treatment and Chemical Cleaning for Electroplating: Used in the formulation of metal surface cleaners and pre-electroplating degreasers, utilizing its weak alkalinity to emulsify and clean mechanical oil stains on workpiece surfaces.
