2. How Is Potassium Bicarbonate Manufactured?

Industrially, potassium bicarbonate is produced by carbonation — treating an aqueous solution of potassium carbonate (K₂CO₃) or potassium hydroxide (KOH) with carbon dioxide (CO₂):

K₂CO₃ + CO₂ + H₂O → 2 KHCO₃

The process typically involves:

1. Dissolving potassium carbonate or potassium hydroxide in water

2. Bubbling purified CO₂ through the solution under controlled temperature and pressure

3. Crystallizing the potassium bicarbonate from the saturated solution

4. Centrifuging, drying, and milling to desired particle size specifications

High-purity grades (≥99.0%) require additional purification steps and strict quality control per FCC (Food Chemicals Codex) or ACS (American Chemical Society) standards.

3.1 Food & Beverage Industry

Potassium bicarbonate is widely used as a food additive (E501(ii)) with three primary functions:

Leavening Agent in Baking As a source of carbon dioxide, KHCO₃ reacts with acidic components in dough to produce gas bubbles that make baked goods rise. It is the go-to replacement for sodium bicarbonate (baking soda) in low-sodium and sodium-free baking formulations. Commercial bakeries increasingly use it to produce reduced-sodium bread, cakes, and pastries without sacrificing texture or volume.

pH Control & Buffering KHCO₃ is an effective and economical buffering agent. It stabilizes acidity in:

 Processed foods and beverages

 Winemaking (adjusting must acidity)

 Club soda and carbonated soft drinks

 Bottled mineral water (as an electrolyte and pH balancer)

Potassium Fortification As a source of potassium, it is used in functional beverages and electrolyte drink formulations.

3.2 Agriculture & Horticulture

Potassium bicarbonate serves two critical roles in agriculture:

Organic Fungicide KHCO₃ is an effective contact fungicide against powdery mildew, apple scab, Botrytis, and various other fungal pathogens. It works by disrupting the fungal cell wall through pH alteration and osmotic pressure. It is approved for use in organic farming under USDA National Organic Program (NOP) standards and EU organic regulations, making it a preferred alternative to synthetic fungicides.

 Foliar spray: 2.5–5 g/L water, applied preventatively or at first sign of disease

 Compatible with integrated pest management (IPM) programs

 Zero pre-harvest interval in most jurisdictions

Soil pH Amendment As a mild alkaline compound, potassium bicarbonate neutralizes acidic soils while simultaneously supplying potassium — a primary macronutrient essential for plant growth, fruit development, and stress tolerance.

3.3 Fire Suppression

Potassium bicarbonate is the active ingredient in Purple-K (PKP) dry chemical fire extinguishing agents, recognized as the most effective dry chemical agent for Class B (flammable liquid) and Class C (electrical) fires. Key facts:

 Approximately twice as effective as sodium bicarbonate-based agents

 The only dry chemical agent recognized by the U.S. National Fire Protection Association (NFPA) for airport crash rescue firefighting

 Used in both portable extinguishers and fixed suppression systems

 Decomposes upon contact with flame, releasing CO₂ that smothers the fire while potassium compounds chemically interrupt the combustion chain reaction
